- 4 slices bread (sourdough or whole wheat)
- 1 ripe avocado sliced or mashed
- 1 large tomato, sliced
- 6–8 slices fresh mozzarella cheese
- 2 tbsp butter, softened
Seasoning
- salt and black pepper to taste

Butter the bread: Spread a thin, even layer of softened butter on one side of each slice of bread. This helps create a golden, crispy exterior.
Layer the fillings: Place two slices of bread butter-side down. Add mozzarella cheese, avocado slices or mash, tomato slices, a pinch of salt and pepper, and basil if using. Top with more mozzarella and the remaining bread slices, butter-side up.
Grill the sandwich: Heat a nonstick skillet over medium-low heat. Place the sandwiches in the pan and cook for 3–4 minutes until the bottom is golden and the cheese begins to melt.
Flip carefully: Gently flip each sandwich and cook the second side for another 3–4 minutes until golden brown and the mozzarella is fully melted.
Rest and slice: Remove the sandwiches from the pan and let them rest for about 1 minute. Slice in half and serve warm.
