Onions & Base
- 4 large yellow onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
Broth & Seasonings
- 4 cups beef broth
- 1 cup dry white wine (optional)
- 1 tsp fresh thyme or 1/2 tsp dried thyme
- 1 bay leaf
- salt and pepper to taste
Toppings
- 1 baguette sliced and toasted
- 2 cups grated Gruyère cheese
Caramelize the onions: Melt butter with olive oil in a large pot over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 30–40 minutes until golden and sweet.
Add garlic and deglaze: Stir in minced garlic and cook 1 minute. Pour in white wine if using to deglaze the pot, scraping up browned bits from the bottom.
Add broth and herbs: Stir in beef broth, thyme, and bay leaf. Bring to a gentle simmer and cook for 20–30 minutes. Season with salt and pepper to taste.
Prepare bread and cheese: Slice baguette and toast until lightly golden. Grate Gruyère cheese and set aside.
Assemble and broil: Ladle soup into oven-safe bowls. Place toasted bread on top and sprinkle with Gruyère. Broil until cheese is melted and bubbly.
