  • Baking Sheet
  • Oven-Safe Bowls or Crocks

Ingredients

Onions & Base

  • 4 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced

Broth & Seasonings

  • 4 cups beef broth
  • 1 cup dry white wine (optional)
  • 1 tsp fresh thyme or 1/2 tsp dried thyme
  • 1 bay leaf
  • salt and pepper to taste

Toppings

  • 1 baguette sliced and toasted
  • 2 cups grated Gruyère cheese

Instructions

  • Caramelize the onions: Melt butter with olive oil in a large pot over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 30–40 minutes until golden and sweet.
  • Add garlic and deglaze: Stir in minced garlic and cook 1 minute. Pour in white wine if using to deglaze the pot, scraping up browned bits from the bottom.
  • Add broth and herbs: Stir in beef broth, thyme, and bay leaf. Bring to a gentle simmer and cook for 20–30 minutes. Season with salt and pepper to taste.
  • Prepare bread and cheese: Slice baguette and toast until lightly golden. Grate Gruyère cheese and set aside.
  • Assemble and broil: Ladle soup into oven-safe bowls. Place toasted bread on top and sprinkle with Gruyère. Broil until cheese is melted and bubbly.
  • Serve: Carefully remove from oven and serve hot. Enjoy the rich flavors and comforting warmth in every spoonful.
