Egg Base
- 4 large eggs
- 1 cup cottage cheese full-fat or low-fat
- 1/4 cup milk
Fillings & Seasoning
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and black pepper to taste
- olive oil or butter for greasing the dish
Preheat and prepare the dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 baking dish or pie dish with olive oil or butter to prevent sticking.
Mix the egg base: In a large mixing bowl, whisk together the eggs, cottage cheese, milk, garlic powder, onion powder, salt, and black pepper until well combined.
Add spinach and cheese: Gently fold the chopped spinach and shredded cheese into the egg mixture, making sure everything is evenly distributed.
Pour into baking dish: Pour the mixture into the prepared baking dish and smooth the top so it bakes evenly.
Bake until set: Bake uncovered for 35–40 minutes, or until the center is set and the top is lightly golden.
Rest and serve: Remove the quiche from the oven and let it rest for 5 minutes before slicing. Serve warm and enjoy.
