Ingredients
  

Egg Base

  • 4 large eggs
  • 1 cup cottage cheese full-fat or low-fat
  • 1/4 cup milk

Fillings & Seasoning

  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt and black pepper to taste
  • olive oil or butter for greasing the dish

Instructions
 

  • Preheat and prepare the dish: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 baking dish or pie dish with olive oil or butter to prevent sticking.
  • Mix the egg base: In a large mixing bowl, whisk together the eggs, cottage cheese, milk, garlic powder, onion powder, salt, and black pepper until well combined.
  • Add spinach and cheese: Gently fold the chopped spinach and shredded cheese into the egg mixture, making sure everything is evenly distributed.
  • Pour into baking dish: Pour the mixture into the prepared baking dish and smooth the top so it bakes evenly.
  • Bake until set: Bake uncovered for 35–40 minutes, or until the center is set and the top is lightly golden.
  • Rest and serve: Remove the quiche from the oven and let it rest for 5 minutes before slicing. Serve warm and enjoy.
