Cream of Broccoli Soup

  • 2 cups fresh broccoli florets chopped small
  • 1 medium onion finely chopped
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 3 tbsp all purpose flour for thickness
  • 2 cups milk warm
  • 1 cup light chicken or vegetable broth
  • 1 cup shredded cheddar cheese optional broccoli cheddar style
  • 1/4 tsp salt adjust to taste
  • 1/8 tsp black pepper

Instructions
 

  • Chop and wash: Wash broccoli gently and chop into small friendly pieces.
  • Cook onions: Melt butter in a large pot and cook onions until sweet and clear.
  • Make creamy base: Sprinkle flour, stir with a spoon, then add warm milk and broth.
