Potatoes
- 1.5 lb baby potatoes cut into bite-sized pieces
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic minced
- salt to taste
- black pepper to taste
- fresh parsley chopped, for garnish
Parboil the Potatoes: Bring a pot of salted water to a boil and cook the potatoes for about 8 minutes until just tender. Drain and let them steam dry.
Heat the Skillet: Heat olive oil and butter together in a skillet over medium-high heat until melted and sizzling.
Crisp the Potatoes: Add potatoes in a single layer and cook undisturbed for 5–6 minutes until deeply golden on the bottom.
Add Garlic and Seasoning: Stir in garlic, salt, and pepper. Continue cooking, stirring occasionally, until all sides are crispy.
Finish and Serve: Remove from heat, rest for a few minutes, garnish with parsley, and serve warm.
