Ingredients
  

Stew Base

  • 2 lbs boneless skinless chicken breasts or thighs
  • 3 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 small onion, diced
  • 3 cups chicken broth

Creamy Finish

  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • salt to taste
  • 2 tbsp cornstarch
  • 2 tbsp water for slurry

Instructions
 

  • Add ingredients to the crock pot: Place chicken, potatoes, carrots, celery, and onion into the slow cooker, spreading everything evenly.
  • Season and add broth: Add garlic, thyme, parsley, salt, and pepper. Pour in the chicken broth to cover most of the ingredients.
  • Slow cook the stew: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and vegetables are tender.
  • Shred the chicken: Remove the chicken from the crock pot, shred with two forks, and return it to the stew.
  • Make it creamy: Stir in the heavy cream. Mix cornstarch and water, add to the stew, and cook for another 20–30 minutes until thickened.
  • Taste and serve: Adjust seasoning if needed, let rest briefly, and serve warm.
