  • Measuring Cups and Spoons
  • Cheese Grater

Ingredients

Stew Base

  • 2 lbs beef stew meat, cubed
  • 1 small onion, diced
  • 4 fresh jalapeños, sliced (remove seeds for mild heat) use 4–5 depending on heat preference
  • 1 tbsp minced garlic
  • 4 cups beef broth

Creamy Elements

  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon pieces about 6–8 strips, chopped
  • 2 cups baby potatoes, halved

Seasoning and Add-ins

  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper to taste

Instructions

  • Prepare and add the beef and veggies: Place the cubed beef, diced onion, sliced jalapeños, minced garlic, and halved baby potatoes into the crockpot. This is where the stew's cozy flavors begin to come together.
  • Pour in the broth and seasonings: Add the beef broth, paprika, onion powder, salt, and black pepper. Give everything a gentle stir so the flavors mix and create a savory base.
  • Slow cook until tender: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender and the potatoes are soft.
  • Stir in the creamy elements: Once cooked, stir in the heavy cream, softened cream cheese, and shredded cheddar. Mix slowly until the cheeses melt and the stew becomes silky and creamy.
  • Add the bacon and adjust seasoning: Stir in the cooked bacon pieces and taste the stew. Adjust salt and pepper if needed. If you prefer a thicker stew, let it rest with the lid off for 10 minutes.
  • Serve warm and garnish: Ladle the stew into bowls and top with extra cheddar, sliced jalapeños, or crispy bacon. Enjoy the creamy, spicy comfort in every bite.
