- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1 cup vegetable oil
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 3 cups apples, peeled and diced Granny Smith or Honeycrisp
- 1/2 cup chopped walnuts or pecans optional
