Lemon Butter Sauce

  • 4 tbsp butter unsalted, if possible
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested
  • 1–2 lemons, juiced adjust to taste, about 3–4 tbsp juice
  • 1/2 cup grated parmesan cheese plus more for serving
  • 1/2 cup reserved pasta water as needed, to loosen the sauce

  • black pepper to taste
  • 1 pinch red pepper flakes optional, for gentle heat
  • 2 tbsp fresh parsley, chopped optional garnish

Instructions
 

  • Cook the linguine: Bring a large pot of salted water to a boil and add the linguine. Cook according to the package directions until just al dente. Before draining, carefully scoop out about 1/2 cup of the starchy pasta water and set it aside. Drain the linguine and keep it nearby while you prepare the lemon butter sauce.
  • Make the lemon butter base: In a large skillet or sauté pan, melt the butter together with the olive oil over medium heat. Add the minced garlic and cook for 1–2 minutes, stirring gently, until it becomes fragrant and soft but not browned. Stir in the lemon zest and freshly squeezed lemon juice, letting everything warm together into a bright, cozy sauce that smells like comfort and sunshine.
  • Toss the linguine in the sauce: Add the cooked linguine straight into the skillet with the lemon butter mixture. Use tongs or a wooden spoon to gently toss the pasta so every strand is coated. Slowly pour in a little of the reserved pasta water at a time, tossing as you go, until the sauce looks glossy and clings beautifully to the noodles without being watery.
  • Add the parmesan and finish the sauce: Sprinkle the grated parmesan cheese over the pasta and continue tossing. The cheese will melt into the warm lemon butter, creating a silky, creamy coating around the linguine. If the sauce feels too thick, add another splash of pasta water; if it feels too thin, let it simmer gently for a minute while you toss, until it looks just right.
  • Season, garnish, and serve: Taste the pasta and season with salt, black pepper, and a pinch of red pepper flakes if you like a little warmth. Toss in some chopped fresh parsley for color and freshness. Serve the easy lemon butter linguine immediately, topped with extra parmesan and a little extra lemon zest if you want a brighter flavor.
