Ingredients
  

Candy Base

  • 1 small potato peeled
  • 4 cups powdered sugar plus more for rolling

Filling

Instructions
 

  • Cook and mash the potato: Boil the peeled potato in a small saucepan until fork-tender. Drain well and mash until completely smooth with no lumps.
  • Mix in powdered sugar: Transfer mashed potato to a bowl and gradually mix in powdered sugar until a soft, non-sticky dough forms.
  • Roll out the dough: Dust a clean surface with powdered sugar and roll the dough into a thin rectangle.
  • Spread the peanut butter: Evenly spread peanut butter over the rolled dough, leaving a small border around the edges.
  • Roll and chill: Carefully roll the dough into a log. Wrap and chill in the refrigerator for about 30 minutes to firm up.
  • Slice and serve: Slice the chilled log into small rounds and serve. Store leftovers in the refrigerator.
