- 6 large tortillas (whole wheat or low-carb)
- 8 large eggs or use half egg whites
- 1/2 cup shredded cheddar cheese or Mexican blend
- 1 cup cooked turkey sausage or grilled chicken diced or crumbled
- 1/2 cup bell peppers diced
- 1/2 cup spinach chopped
