Chicken
- 4 boneless, skinless chicken breasts or thighs
- 1/3 cup all-purpose flour for dredging
Lemon Sauce
- 3 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/3 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp Italian seasoning
- salt and black pepper to taste
- fresh parsley, chopped for garnish
Season and dredge the chicken: Season the chicken with salt and black pepper, then lightly dredge each piece in flour, shaking off the excess.
Sear the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides and cooked through. Remove and set aside.
Sauté the garlic: In the same skillet, melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant.
Build the lemon sauce: Pour in the chicken broth, lemon juice, and lemon zest. Sprinkle in the Italian seasoning and stir, scraping up the browned bits from the pan.
Return chicken to the pan: Add the chicken back into the skillet and simmer for a few minutes, spooning the sauce over the top until slightly thickened.
Finish and serve: Taste and adjust seasoning. Garnish with fresh parsley and serve warm with your favorite sides.
