- 1 lb boneless skinless chicken breast, diced
- 3 cloves garlic, minced
- 2 cups uncooked pasta penne or rotini work well
- 2 cups chicken broth
- 1 cup marinara or tomato sauce
- 1 tsp Italian seasoning
- salt and black pepper to taste
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh basil, chopped optional for garnish
Sauté the chicken: Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5–6 minutes until lightly golden and cooked through.
Add garlic and seasonings: Stir in the minced garlic and Italian seasoning. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
