  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken breast, diced
  • 3 cloves garlic, minced
  • 2 cups uncooked pasta penne or rotini work well
  • 2 cups chicken broth
  • 1 cup marinara or tomato sauce
  • 1 tsp Italian seasoning
  • salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh basil, chopped optional for garnish

Instructions
 

  • Sauté the chicken: Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5–6 minutes until lightly golden and cooked through.
  • Add garlic and seasonings: Stir in the minced garlic and Italian seasoning. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  • Add pasta and liquids: Add the uncooked pasta, chicken broth, and tomato sauce to the pan. Stir well to combine, making sure the pasta is mostly submerged.
  • Simmer until tender: Bring everything to a gentle boil, then reduce heat to a simmer. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
  • Add mozzarella: Reduce heat to low and sprinkle mozzarella cheese over the pasta. Cover and let it melt for 2–3 minutes until gooey and creamy.
  • Finish and serve: Remove from heat, garnish with fresh basil if desired, and serve warm straight from the pan.
