Sausage & Aromatics
- 1 lb Italian sausage, casing removed
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
Broth & Cream
- 4 cups chicken broth
- 2 cups heavy cream or half-and-half
Gnocchi & Veggies
- 1 lb potato gnocchi
- 2 cups fresh spinach, chopped
Seasonings & Garnish
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- salt and black pepper to taste
- grated Parmesan cheese for serving
Cook the sausage: Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into small pieces. Remove sausage and set aside.
Sauté aromatics: In the same pot, add diced onion and cook 3–4 minutes until soft. Stir in minced garlic and cook 1 minute until fragrant.
Add broth and seasonings: Return sausage to the pot. Pour in chicken broth, add Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring to a gentle simmer.
Add gnocchi and cream: Stir in gnocchi and cook according to package instructions until tender. Pour in heavy cream and let simmer 5–10 minutes to thicken slightly.
Add spinach and finish: Stir in chopped spinach until wilted. Taste and adjust seasoning as needed.
Serve: Ladle soup into bowls and top with grated Parmesan cheese. Enjoy warm and comforting!
