Ingredients
  

Smothered Chicken

  • 4 boneless skinless chicken breasts or thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika optional
  • 2 tbsp olive oil or butter
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour for gravy
  • 1 1/2 cups chicken broth

Instructions
 

  • Season the chicken: Sprinkle chicken evenly with salt, pepper, and paprika on both sides.
  • Sear the chicken: Heat oil in a skillet over medium heat and cook chicken until golden on both sides. Remove and set aside.
  • Cook the onions: Add onions to the same skillet and cook until soft and lightly caramelized. Stir in garlic.
  • Make the gravy: Sprinkle flour over onions, stir well, then slowly pour in chicken broth while stirring until smooth.
  • Smother the chicken: Return chicken to the skillet, cover with gravy, reduce heat, and simmer until tender.
  • Rest and serve: Let rest for a few minutes, then serve hot over mashed potatoes or rice.
