Ingredients
  

Puda Batter

  • 1 cup gram flour (besan)
  • 1 cup fresh spinach finely chopped
  • 1/4 cup onion finely chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp red chili powder adjust to taste
  • to taste salt
  • as needed water to make smooth batter
  • as needed oil for cooking

Instructions
 

  • Prepare the batter: I mix gram flour, cumin seeds, red chili powder, salt, and water in a bowl until the batter is smooth and lump-free.
  • Add vegetables: I gently fold in the finely chopped spinach and onions, making sure everything is evenly mixed.
  • Rest the batter: I let the batter rest for a few minutes so the flavors settle and the texture improves.
  • Heat the pan: I heat a non-stick pan or tawa and lightly grease it with oil.
  • Cook the puda: I pour a ladle of batter onto the pan, spread gently, and cook on medium heat until golden spots appear.
  • Flip and finish: I flip the puda and cook the other side until fully cooked and lightly crisp.
