Ingredients
  

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted

Cheesecake Filling

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs room temperature
  • 1 cup sour cream

Strawberry Topping

  • 2 cups fresh strawberries, chopped
  • 1/2 cup strawberry jam or glaze

Instructions
 

  • Prepare the crust: Mix graham cracker crumbs and melted butter until evenly combined. Press firmly into the bottom of a parchment-lined 9x13-inch pan and refrigerate.
  • Beat the cream cheese: In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Add sugar and vanilla: Mix in granulated sugar and vanilla extract until fully incorporated and smooth.
  • Add eggs and sour cream: Beat in eggs one at a time on low speed, then gently fold in the sour cream.
  • Bake the cheesecake: Pour the filling over the crust and bake at 325°F (165°C) for 45–50 minutes, until the center is slightly set.
  • Cool and chill: Let the cheesecake cool completely, then refrigerate for at least 4 hours for clean slicing.
  • Add strawberry topping: Mix chopped strawberries with strawberry jam or glaze and spread evenly over the chilled cheesecake.
  • Slice and serve: Lift from the pan, slice into neat squares, and serve chilled.
