Ingredients
  

Banana Bread Batter

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/3 cup melted coconut oil or olive oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour or whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • chopped walnuts or sugar free chocolate chips optional

Instructions
 

  • Mash the bananas: In a large mixing bowl, mash the ripe bananas until mostly smooth. The riper the bananas, the sweeter the bread.
  • Add the wet ingredients: Whisk in the eggs, melted oil, applesauce, and vanilla extract until well combined.
  • Mix the dry ingredients: In a separate bowl, stir together the flour, baking soda, cinnamon, and salt.
  • Combine the batter: Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Add optional mix-ins: Fold in nuts or sugar free chocolate chips if using.
  • Bake the banana bread: Pour the batter into a greased loaf pan and bake at 350°F (175°C) for 50–60 minutes, until a toothpick inserted in the center comes out clean.
  • Cool and slice: Let the bread cool in the pan for 15 minutes, then transfer to a rack to cool completely before slicing.
