- 1/4 cup Turkey drippings from roasted turkey
- 4 tbsp Unsalted butter
- 1/4 cup All-purpose flour
- 2 cups Chicken or turkey stock low-sodium preferred
- to taste Salt
- to taste Black pepper
- 1 tsp Fresh thyme optional, chopped
Prepare the pan drippings and butter: In a medium saucepan over medium heat, combine the turkey drippings and butter. Stir until melted and well blended, creating the base for your gravy.
Add the flour: Sprinkle the flour into the melted butter and drippings, whisking constantly to create a smooth roux. Cook for 2–3 minutes until lightly golden to remove the raw flour taste.
Pour in the stock: Gradually add the chicken or turkey stock while whisking to prevent lumps. Bring the mixture to a gentle simmer, stirring frequently to thicken the gravy.
Season the gravy: Add salt, black pepper, and fresh thyme if using. Taste and adjust the seasoning as needed. Simmer for another 2–3 minutes until the gravy reaches desired consistency.
Serve warm: Pour the rich turkey gravy over roasted turkey, mashed potatoes, or stuffing. Enjoy the smooth, savory flavor that elevates your holiday meal.
